Thanksgiving Update
Nov. 21st, 2007 12:13 amAs I mentioned in an earlier journal entry, I'm going to be working Thanksgiving, which means I'll be sleeping during the day. I can't move Thanksgiving up a day. I'm working Wednesday night, meaning I'll be sleeping during that day, too.
Any major cooking would have to be done Tuesday and I had my quarterly doctor's appointment smack dab in he middle of everything. Since I couldn't get everything done, this is what I made.
SPIRAL-SLICED GLAZED HAM
What a disappointment! I put it in the large crockpot for a gentle heating and carmalized thehell heck out of it. Is it burnt? Nooo. Wouldn't call it burned. But, it certainly ain't a nice juicy pink ham. Looks like it was marinated in teriyaki sauce for a few days.
Didn't I watch it? Well, no. Remember I had a doctor's appointment. And, while I was gone, the ham went from warm on the outside, cold on the inside, to spiral-sliced ham jerky. Yum.
TURKEY BREAST
After I got back from the doctor's appointment, I put the turkey breast into the convection oven and let it cook S-L-O-W-L-Y. I was a bit worried about it. It wasn't quite thawed, but it came out well. It might have been better if I had rubbed it with spices and maybe, some EVOO, but I didn't.
Now, unlike the various forms of turkey roll that I've made in the past, this was a wingless, legless carcass. I didn't bother stuffing it because of the ice. I'm just happy that after all these years, I finally got me some Thanksgiving turkey that's real turkey!
SAGE & ONION STUFFING
I miss my mom's sage and onion dressing. I've tried to make it every year, only to have the late Dominic take over the kitchen and make HIS stuffing with ground meat and/or pork sausage. I'd BEG him to left me make it or at the very least, leave out the ground meat and/or pork sausage, but no. It had to be his way, each and every year.
This year, I got to make it MY way, and boy, was it GOOD!
I have been tempted to make up a batch of pumpkin pie filling, put it in a casserole dish and serve it as is. However, I'm out of time. Looks like we'll be going with a store bought pie this year.
We will have no green bean casserole. It's fine when it's warm, but I'm just not wild for it as a leftover. I can do without the crescent rolls, but I must have some cranberries!
